is the owner and wine maker of the "Clos du Caillou" estate in Côtes du Rhône, where this wine is produced. Le Clos du Caillou was established in 1895 by Elie Dussaud (the architect who created the Suez Canal and designed the port of Marseille). The property was mostly wooded and used as a hunting reserve. Organic viticulture began in the 1950s, and the estate was certified in 2009. Now, much of the estate has been farmed biodynamically for almost 20 years. The vines planted in the 1950s and 1960s are now of excellent age, and the children of winemaker Sylvie are in the process of taking over the running of the estate. Fruit is hand-picked and hand-sorted, then natural yeast fermented in a mix of concrete and stainless steel tanks, with 5 % whole bunches included. Cuvaison lasts 30 days, and extraction is done via pumpover and delestage. Matured for 14 months in 50% old foudres, demi-muids and 50% concrete tanks. 

Tasting Notes: A deep and elegant wine. On the nose, you'll find Provencal herbs notes, black cherry, licorice and peppery garrigue. A full-bodied wine showing strength and power from the South of France combined with a touch of freshness.

Pairing: Match this wine with a lamb tagine or beef or pork ribs. When it comes to cheeses, opt for fresh goat or sheep's milk.
