After a manual harvest, fermentation follows the traditional method in the tank, with vinification that involves de-stemming, the use of whole berries and a pre-fermentation maceration with punching down. The ageing period takes place in Burgundy pièces for a period of 12 months, giving the wine a notable structure and complexity.

Tasting Notes: Bold, rich, deep and complex, this wine offers tiers of raspberry and cherry flavours with secondary aromas including earth and rich coffee. It has black fruit concentration with touches of exotic, extravagant spiciness and very elegant tannins with a long lingering finish.

Pairing: It goes well with feathered game (pigeon, quail, woodcock), hare, escargot, and recipes based on noble red-fleshed and fatty fish (salmon, tuna, turbot), or with medium-aged semi-hard or hard cheeses.
