The Story
From the remote highlands of Alta Irpinia 900 metres above sea level comes one of Italy’s most radical white wines. Pierluigi Zampaglione farms just 2 hectares of ancient Fiano vines on volcanic soils, organically and with immense patience. The yields are tiny. The altitude is extreme. The man? A stubborn visionary who named his wine after Don Quixote himself. This is not commercial Fiano. This is Fiano as it was meant to be: wild, textural, and fiercely independent.
Tasting Notes
Golden in the glass, almost hazy by choice. Aromas of ripe apricot, almond skin, dried herbs, chamomile and flint leap from the glass. On the palate it’s dense, structured, and quietly explosive. Waxy, salty, honeyed but dry, with an almost tannic grip and a long, smoky finish. You don’t sip this wine—you experience it.
Food Pairings
The perfect match for richly flavoured seafood, roast chicken, aged cheeses, or wild mushroom risotto. It’s also a dream with bottarga, grilled octopus, or gnocchi with sage butter. Best enjoyed slowly, with stories and silence, or with friends who respect a wine with soul.
