Novum Pinot Noir 2022

A beautiful and elegant expression of New Zealand Pinot from Novum. Will and Rachel Hoare – Novum owners and winemakers – have selected parcels from two cool vineyard sites for this Pinot wine with great textural interest and detail, opulence, but also some seriousness. Perfect to cellar for six to nine years.

Tasting Notes: Rich and highly fragrant with dark red berry fruit, dried herb, cigar box and subtle earthy notes. Mouth-filling, generous with a core of ripe cherry, plum and spice flavours, yet savoury too.

Pairing: Being light and perfumed, this Pinot offers plenty of versatility. Pinot is always my go to for people not kin on white with seafood. So it can match oily fish like salmon, or think bouillabaisse. Of course salami and prosciutto. Marinara pasta, crab pasta wiht tomato base. A rich pasta pesto will be a delight too. Light meat grilled like chicken and pork will work well.
