McHenry Hohnen Rolling Stone Cabernet Blend 2016

Made in very limited quantities, this wine expresses the pure essence of the estate's remarkable southern Margaret River site - Hazel’s Vineyard. The best parcels of fruit were fermented in open stone fermenters with the use of indigenous yeasts. Some of the wines were left on skins post-fermentation for several weeks to provide savouriness and structure to the blend. Others were pressed earlier for freshness and aromatic lift. Each variety was kept separate and aged in the finest selection of French oak barrels for 18 months before bottling. A wine that is unfined and unfiltered.

Tasting Notes: The nose is a display of fragrant violet, blackcurrant and blueberry complemented by savoury notes of black olive, tobacco and dark chocolate. The palate is opulent yet refined, combining tense dark fruits and sweet spice with firm gravelly tannins providing impressive length.

Pairing: This blend pairs beautifully with grilled or roasted meats where the wine’s structure and tannins complement the richness of the dishes. It also matches well with hard cheeses like aged cheddar and hearty dishes such as slow-cooked beef or mushroom risotto.
