Fetherston Vintners is the collaboration of Chris Lawrence and Camille Koll. Camilla started working for Domaine Chandon at just 18 years of age. Her roles at Chandon changed over her seven-year tenure, starting with restaurant and cellar door support and progressing to overseeing the visitor centre.
Now, Camilla wears many hats at Fetherston, from marketer and IT 'fixer', to assistant winemaker and co-viticulturalist, administrator, bookkeeper and stock controller.
A spectacular single vineyard wine from Swallowfield Vineyard, Gembrook. The fruit is all hand-picked, whole-bunch pressed and fermented wild (indigenous yeast) in ultra-tight grain French oak puncheons.
Tasting Notes: The palate delivers mouthwatering intensity, bursting with grapefruit, stone fruits, cashews and a hint of fresh vanilla bean. The finish is delicate and long with an invigorating acidity.
Pairing: Our dish pick? Pan-roasted blue eye cod with a Panzanella salad.
