As with all of winemaker Emilio's wines, the Nerello Mascalese and Nerello Cappuccio grapes are organically and biodynamically grown in a small vineyard on the slopes of Mount Etna. 30% of the wine is aged in large oak barrels for around 18 months.
Tasting Notes: This natural wine is fresh and lively, with bright red fruit and black pepper flavours that will mellow with age. There is also a fantastic smokiness to the wine so often found in wines from Mount Etna.
Pairing: We think steak with Béarnaise sauce would stand up to the bottle and round out the wine’s tannins nicely. So simply think a nice steak and a nice creamy sauce or mayonnaise.
