De Fermo's 'Launegild' is a Chardonnay typically produced on Trebianno land. The original vines were brought back from France by Eloisa de Fermo’s great-uncle (“Don Carlino” for whom the family Pecorino is named) and planted in 1926. The wine is fermented spontaneously and very slowly with native yeasts and no temperature control in botti. It goes through malolactic fermentation and is aged in botti for 9-12 months. The wine is bottled without fining, filtration or additional sulfur. The vines are certified-biodynamic and harvested by hand. The bunches are partly destemmed, macerated for a few hours, and pressed in an old-school vertical pressoir from which only free-run (first-press) juice is used.

In a natural approach, the wine is made by soft pressing and spontaneous alcoholic fermentation with indigenous yeasts in oak barrels without temperature control and then aged for 12 months in tonneau.

“Launegild” is the Lombardian word for the legal process by which the original owners of the property donated the land to the Catholic church in the 9th century. 

Eloisa is proud of her property and are working the olive trees, wheat fields, vegetable gardens and raising animals in addition to tending the vines. This push for biodiversity very much stems from their dedicated, thoughtful approach to biodynamic farming, a philosophy that resonates in every aspect of their lives.

Tasting Notes: Aromas of ripe pear, banana and apricot salad, medlar and walnut; the aromas rise neat and clean. Has a soft taste and, by contrast, finds a nice acidity. To us? The perfect balance.

Pairing: Pairs extremely well with elaborate fish dishes and white meats. This is not your typical chardonnay, it is funky and savoury, you need to be open to the extraordinary.
