After working with his family Christophe Patrice created his own domaine in 2006. In 2011 he took over the Daniel Roblot estate, representing today a vineyard with an area of 22 hectares, with an average age of 45 years. Unlike the majority of Chablis winegrowers, the vines are planted in low density and single guyot pruning is practised instead of double guyot to concentrate on quality over quantity. This care and attention is reflected in the high quality of his wines.
This wine is 100% Chardonnay purchased from growers in the region. The fruit is whole-bunch-pressed in stainless steel tanks for a cool fermentation with indigenous yeast. Once the fermentation process is complete, the wine is racked off lees and matured in tanks for four months without malolactic conversion.
Tasting Notes: A flavour profile of melon and green apple, alongside mineral tones and a dry saline character with a crisp acidic finish.
Pairing: This wine is delicious on its own. However, we suggest pairing with white meat dishes or light seafood, such as white fish, oysters. Excellent with burrata and seafood pasta. I love it with Carne & Cucina's taramasalata.
