Biodynamically farmed and made with minimal intervention, this Syrah reflects the unique granite soils of Beechworth, imparting a distinct minerality alongside the grape's natural peppery and dark fruit characteristics. The wine is fermented with indigenous yeasts and aged in French oak barrels, adding depth and complexity without overpowering the fruit. Mineral-like and precise, there is an umami quality, that has only been enhanced by the time in the bottle.
Tasting Notes: Cured meats, and berry compote, are woven into the palate, while the acidity though softened with time, is still present and fresh.
Pairing: Pair this with charred, barbequed or smoked gamey meats or spiced oven-roasted lamb.
