This delightful wine is aged for 18 months in old wooden barrels – foudres – in French. Winemaker Alain focuses on ploughing and working the soil in the springtime. All grapes are then hand-harvested, sorted and brought to the winery. Here, the grapes are moved onto a vibrating table to remove unwanted material before being de-stemmed. The must of the rosé and white are cooled with the rosé spending 24 hours on skins before fermentation.
Tasting Notes: Being a blend of Mourvèdre, Grenache and Cinsault grapes, they bring together aromas of stone fruits including peach and nectarine as well as blood orange on the nose. On the palette, a beautiful roundness and persistence leave a delightful touch on the taste buds.
Pairing: Incredibly versatile and food-friendly, this wine pairs beautifully with scallops, white fish, or a light tomato-based pasta. It’s the kind of wine the French might open on a late afternoon to enjoy while watching the sunset—truly the perfect aperitif! One of the best place in the world to leave. It matches perfectly with tapenade and olives. anything form the Provence cooking, think anchovies, sardines and onion tarts. White meat and pork, white asparagus and mayonnaise.
