Pascal Reverdy Terre de Maimbray Sancerre AOC 2023

The Reverdy’s are highly accomplished viticulturists.  Pascal Reverdy’s domaine is based in the tiny hamlet of Maimbray. Maimbray is located in a valley surrounded by chalk hills adjacent to Chavignol and Verdigny. From their small cellar they produce one of France’s most highly awarded Sancerres. They take pride in the maintenance of their vineyards, with great attention to detail and constant care throughout the year. 100% Sauvignon Blanc from 20 yeard old vines. Matured in tank on fine lees for 6 months.

Tasting Notes: This Sancerre shows a wonderful concentration of pure Sauvignon Blanc fruit, with chalky mineral flavours adding another complex dimension. Think herbaceous top notes mixed with gooseberry, lime and touches of asparagus and wet stone notes. Finishes dry with crisp acidity and a brisk yet lingering aftertaste.

Pairing: Seafood, salt-based fish and salads. The perfect ‘S’ trio. The best matching here is this France cheese called Chavignol, a little fresh goat cheese. It is made in this region.
