Why we chose this wine
There’s something effortlessly refined about Joseph Drouhin Réserve de Vaudon Chablis 2025, a beautiful expression of Chablis, celebrated for its purity, freshness, and unmistakable mineral edge that feels like a breath of sea air.
Made entirely from Chardonnay, this is Chardonnay in its most honest form no heavy oak, no excess weight just crisp citrus, green apple, and a subtle flinty character that lingers elegantly on the palate. The term Réserve here isn’t about richness, but careful selection, with fruit sourced from some of the finest plots to create a wine with added precision and balance, a more focused expression of classic Chablis.
As the northernmost part of Burgundy, Chablis benefits from cooler temperatures and ancient limestone soils rich in marine fossils, giving the wine its signature minerality and vibrant acidity, making it feel so alive and refreshing compared to richer Chardonnay styles. Aged in stainless steel rather than oak, the wine preserves its clarity and energy, resulting in a clean, food-friendly style that truly defines what Chablis is meant to be.
Crafted by the historic Maison Joseph Drouhin, a family-run estate founded in 1880 and deeply committed to organic and biodynamic practices, the philosophy is simple let the vineyard speak.
And here, it speaks with clarity, elegance, and quiet confidence, creating a wine that doesn’t shout but whispers beautifully fresh, mineral, and timeless, perfect for seafood, light dishes, or a relaxed, sunlit moment.

Why we chose Réserve de Vaudon
This is the style of Chablis we return to: pure Chardonnay with real precision, brightness and quiet depth. Citrus and yellow fruit give it generosity, while its saline mineral line keeps every sip fresh and makes the wine feel completely at home beside food.
The Drouhin family in Chablis
Maison Joseph Drouhin's connection to Chablis took shape in the 1960s, when Robert Drouhin recognised the potential of vineyards that had struggled after phylloxera. He became one of the early Burgundy proprietors to help revive the area with wines focused on the character of their place.
Réserve de Vaudon comes exclusively from Drouhin family vineyards, mainly in the Vauvillien valley between Montée de Tonnerre and Mont de Milieu. These steep slopes are scattered with fossil-rich stones and sit on the Kimmeridgian limestone that gives Chablis its distinctive mineral and lightly saline expression.
Farming and winemaking
Across its estate, Drouhin has used organic practices since the late 1980s and biodynamic practices since the 1990s, working with deliberately low yields so the vineyard remains clear in the finished wine.
The Chardonnay is slowly pressed as whole bunches in a pneumatic press. After settling, the juice ferments in stainless steel and remains in tank for seven to ten months. The restrained approach preserves freshness and texture without covering the wine in oak.
What the 2025 tastes like
The 2025 vintage combines ripe yellow fruit and delicate flowers with classic Chablis lemon, fern and saline notes. The palate is ample and gently rounded, yet still lively and precise, finishing with finesse, balance and excellent length.
How to serve it
Serve at 12-13°C in a wide-bowled Chardonnay glass. It is excellent with oysters, seafood, roast chicken or creamy pasta. Enjoy it now for its bright fruit and mineral freshness, or cellar it for several years as the texture becomes more rounded.
