Why we chose this wine
This is a textured, expressive and beautifully evolved Vermentino we love to serve when the table calls for something a little more serious. Hailing from Vermentino di Gallura in northern Sardinia and crafted by the talented female winemaker of Tenuta Olbios, it’s a wine with soul, layered with citrus peel, dried herbs and savoury almond, underpinned by a saline, mineral backbone and a gentle, rounded acidity that only time in bottle can offer.
What makes this wine even more special to us is the memory of its maker joining us in our restaurant, sharing her passion, her story, and her vision. Her quiet determination and respect for the land resonate in every glass. Gently handled and aged naturally, this Vermentino sees no heavy oak, just balance, depth, and a quietly confident structure.
Still fresh but with lovely complexity and texture, this is not an aperitif Vermentino. It’s a table wine in the best sense: food-friendly, unfussy and quietly elegant. The glass cork is a beautiful detail, practical, eco-conscious, and a nod to the finesse inside.
