Why we chose this wine
“Cavolo” is Brigaldara’s more agile, contemporary expression of Amarone a wine that honours tradition while embracing lightness, energy, and immediacy. Crafted from hillside Corvina, Corvinone, and Rondinella, the grapes are gently dried through appassimento, but with a shorter resting period, allowing for purity of fruit and freshness of structure.
Fermented slowly, then aged with restraint in large Slavonian oak, this Amarone shows a brighter, more lifted style, no less complex, but elegantly restrained.
On the nose, it opens with wild red cherries, ripe plum, and sweet spices, followed by hints of dried herbs, cocoa, and subtle orange peel. The palate is vibrant and full, but never heavy, the tannins are polished, the acidity mouthwatering, and the finish clean, dry, and persistent.
This is Amarone for the modern table: expressive, soulful, but with a fresh tempo that invites a second glass.
Behind the wine is the Brigaldara family, who farm with purpose and patience. In 2022, they were honoured with the Gambero Rosso Sustainable Viticulture Award for their commitment to ecological harmony, a philosophy that includes preserving woodlands, maintaining native truffle grounds, and reintroducing sheep to rebuild a self-sustaining ecosystem in their vineyards. It’s a way of farming that values rhythm, regeneration, and respect.
