Why we chose this wine
Another joyful, living wine from northern Italy, playful, cloudy, and full of energy.
Made at Castello di Stefanago, a family-run estate in the hills of Oltrepò Pavese, working organically and biodynamically long before it was fashionable. The estate is led by the Baruffaldi family, with a deep focus on healthy soils, native yeasts and minimal intervention in the cellar.
This pét-nat is bottled while fermentation is still finishing, trapping natural bubbles in the bottle. No fining, no filtration, no additions, just fermented grape juice, time, and patience.
Fresh, lightly fizzy and wildly drinkable, with crunchy apple, citrus peel, white flowers and a gentle yeasty lift. Bright acidity keeps everything snappy, while the soft texture makes it dangerously easy to drink.
