Why we chose this wine
From the biodynamic vineyards of Hazel’s and Calgardup Brook, Rolling Stone is McHenry Hohnen’s most complete and age-worthy wine, a Cabernet Sauvignon-led blend with Malbec, Merlot, and Petit Verdot, made only in the finest vintages.
Organically farmed and wild fermented, the 2016 was aged slowly in French oak to bring harmony, not heaviness. The result is a wine of depth, poise, and quiet power, with layers of cassis, blackberry, and dark plum, alongside cedar, bay leaf, cocoa, and a thread of minerality.
The structure is firm but polished, the acidity fresh, the finish long and savoury. It’s a wine that speaks softly but carries weight, ideal for roast meats, earthy dishes, or cellaring for a decade or more.
